Chocolate Chip Cookies

Ingredients:

- 1 cup butter, softened

- 1 cup white sugar

- 1 cup packed brown sugar

- 2 eggs

- 2 teaspoons vanilla extract

- 3 cups all-purpose flour

- 1 teaspoon baking soda

- 2 teaspoons hot water

- 1/2 teaspoon salt

- 2 cups semisweet chocolate chips

 

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Dissolve baking soda in hot water and add to batter with salt.
  5. Mix in flour and chocolate chips.
  6. Drop by large spoonfuls onto ungreased pans.
  7. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Eggnog Cookies

Ingredients:

- 2 1/4 cups all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon ground nutmeg

- 1/2 teaspoon ground cinnamon

- 1 cup unsalted butter, softened

- 3/4 cup granulated sugar

- 1/2 cup eggnog

- 1 teaspoon vanilla extract

 

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, nutmeg, and cinnamon.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggnog and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until well combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. 

 

Toffee Cookies

Ingredients:

- 1 cup unsalted butter, softened

- 1 cup granulated sugar

- 1 tsp vanilla extract

- 2 cups all-purpose flour

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1 cup toffee bits

 

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until smooth. 
  3. Add in the vanilla extract, then gradually mix in the flour, baking powder, and salt until well combined.
  4. Fold in the toffee bits until evenly distributed throughout the dough.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 12-15 minutes or until golden brown around the edges.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
